Lækkersmækker avokado

Halløj derude!

Så er det onsdag – dvs. over halvvejs til weekend 😉 Jeg er I rigtigt godt humør i dag – både fordi jeg netop har bestået min teoriprøve, og fordi jeg har en træningsaftale med min søde veninde i aften! Vi har aftalt at spise aftensmad sammen bagefter, så jeg har købt ind til lækker salat med kikærter, kylling, sukkerærter, agurk og avokado. I min verden er alt med avokado simpelthen i hit! Hvad med jer?

“Sund” Nutella! // “healthy” Nutella!

Jeg er i himlen. Nutellahimlen (ja, der findes en nutellahimmel?). Jeg er faldet over adskillige lækre opskrifter på nettet – opskrifter, der fik mine tænder til at løbe i vand. I går fik jeg så endelig gjort de nødvendige indkøb og vupti! Pludselig stod jeg med et lækkert lille glas cremet Nutella – af min hjemmedigtede opskrift selvfølgelig. Hold da op, en succes. Jeg må indrømme, at jeg nok fik spist en lige lovlig stor portion – både på knækbrød, på skyren og direkte fra glasset(ups). Så er det jo bare ekstra bonus, at ernæringsindholdet er en del (se: meget!) forbedret i forhold til ”rigtig” Nutella.

Ingredienser (til et lille glas):

  • 100g stenfri dadler
  • 50g hasselnødder
  • 100g banan
  • 30g sukrin gold
  • 15g kakao
  • 15g proteinpulver med chokoladesmag (jeg brugte Caribbean Chocolate from Bodylab)

Fremgangsmåde: Rist hasselnødderne på en tør pande, indtil skallerne kan ”fnuldres” af (sådan nogen lunde i hvert fald). Blend nødderne til mel i en stavblende, og hæld melet over i en lille skål. Herefter blendes dadler til en ensartet masse, og nøddemelet tilsættes igen. Derefter tilsættes banan – og til sidst de tørre ingredienser. Husk at blende godt! Massen skal være ensartet.
Jeg puttede Nutellaen på et gammelt (rengjort) peanut butter glas og stillede det på køl – så skulle det nok kunne holde sig. Jeg får det jo nok alligevel spist inden for de næste par dage…


I am in heaven. Nutella heaven, actually (yes, it exists?). I have come across several delicious recipes on the Internet – recipes that have made my mouth water. Then yesterday I finally went to the mal to by the ingredients and poof! Suddenly I had a delicious little jar of creamy Nutella – homemade recipe of course. Omg, it was a success! I have got to admit that I ate quite a big portion that day – on crisp breads, on my quark, and directly from the jar (oops!). It is good that the nutrient content is improved a lot if you compare to ”real” nutella.

Ingredients (for a little jar):

  • 100g pitted dates
  • 50g hazelnuts
  • 100g banana
  • 30g sukrin gold (you can use other sweeteners)
  • 15g cocoa
  • 15g chocolate protein powder

How to: Roast the hazelnuts on a dry pan until the dark shells can be pealed off (or at least almost pealed off). Blend the roasted nuts into flour in a hand blender, and put the flour into a little bowl. Then blend the dates – and add the flour once again. Blend until you have a homogenous mixture. Then add the banana – and at last the dry ingredients. Remember to mix properly!
I keep my Nutalla in an old (cleaned) peanut butter jar in the fridge – then it should be able to keep fresh. I will probably eat it during the next few days anyway, lol.

Efterårssalat // Autumn salad

Hejsa! Hold da op, hvor går tiden hurtigt, når man har efterårsferie! Jeg har virkelig prøvet at være produktiv, og det er faktisk lykkedes mig rimelig godt (hvis jeg selv skulle sige det). Det er så rart med alt den ekstra tid! Jeg er kommet foran med mine afleveringer (2.g-livet er hårdt..), jeg har ryddet ud i mit tøjskab (nu er der plads til massere af efterårsshopping, haha), og så har jeg selvfølgelig givet den MAX gas med træningen! En anden ting, jeg har nydt, er muligheden for at spise lækker, frisklavet frokost! Det er altså bare hundrede gange bedre end en lunken madpakke. Derfor vil jeg da også lige dele min efterårsferie-favorit frokost med jer!


  • en lille smule olivenolie
  • snittet hvidkål
  • revet gulerod
  • en peberfrugt
  • kyllingetern
  • dressing: cremefraiche(6%) og ketchup

Fremgangsmåde: Svits hvidkål og gulerod i lidt olivenolie på en varm pande. Skær peberfrugten i tern og bland den med den varme hvidkåls/gulerodsblanding. Arranger salaten i en fin skål og top med kyllingetern og dressing. Super nemt og super lækkert!

Hello! I have had vacation this week, and it has been great! My big assignments for the following weeks are done; I have cleaned my closet (now I have space for autumn shopping! Lol), and (most important of all) my muscles are so sore from all that work in the gym. Also I really enjoy getting to eat a fresh, delicious lunch instead of my lukewarm lunch packet – and of course I will show you my autumn-vacation-favorite lunch!


  • A tiny bit of olive oil
  • Cut cabbage
  • Grated carrot
  • A bell pepper
  • Chicken pieces
  • Dressing: crème fraise (6%) and ketchup

How to: Fry the cabbage and the carrot in a bit of olive oil on a hot pan. Cut the bell pepper into smaller pieces and mix it with the cabbage/carrot mixture. Arrange the salad in a cute bowl and top with chicken and dressing. Super easy and super ymmy!

Low Carb Pizza

Hallo out there!

Just thought I would pop in to share a little (and easy) recipe. I find that this can be eaten for lunch, dinner or even breakfast. I mean, who doesn’t love pizza right?

Today has been an easy day. I woke up at 8am and went out for brunch with some of my favorite girls. I only had one class at school – chemistry, my favorite (actually I’m thinking about becoming a doctor? Just an idea.) Later I’ll go to the gym – it is cardio day, so I’m taking two classes. It’s gonna be horribly hard, but I LOVE cardio classes at the moment – the music is loud and the instructor is amazing!

Anyways.. Back to the recipe:


–       1 egg + 2 egg whites
–       a little oil for the pan
–       2 tbsp. tomato paste
–       5-6 pieces of sliced chicken
–       40 g cheese (I used 10%)

How to:
Beat and mix the eggs gently. Spread the oil on a medium heated pan, and cook the eggs like an omelet. Flip it around and add the fillings. Then leave pan on low heat and cover it with a piece of tin foil. Wait about 10 minutes and viola! The cheese is melted! Now arrange the pizza with lots of fresh veggies and ENJOY!

Perfect lunch on a Monday

What’s up guys? Are you enjoying this Monday? I sure am. My first classes were canceled, so I went for a short run in the early sunshine. (Okay.. the weather wasn’t that great, but anyways..) My mind wanted to go for a looong run, but I have trouble with my left hip and I have to be careful. After school I killed my back, triceps and abs at the gym! (Those gains better start coming!!!)

I had this PERFECT lunch as my post run meal! I won’t call it a recipe, just thought it could be an inspiration. Healthy doesn’t have to be boring.


Yes, I’m Angry

Hey Guys!

Am I the only one who is SICK and TIRED of these memes? I mean, who are you to tell me what I should look like? For some reason it has become okay to accuse people of being too skinny? Why? Telling people they are too fat has NEVER been OK, then why is THIS suddenly approvable?

And seriously? What’s with the men? Men want this, not that blablablabla… This is my body! I look like I want! Not the way some random man want’s me to look like. Isn’t that what’s important? That I feel happy about myself? Should I really try to look a certain way, just because “men” want a “woman with curves”? I know these images were probably made to help women feel better about them selves (and their extra kilos) but isn’t it doing the exact opposite?

These images make me think about the “men’s” roll in this beauty ideal conflict. Are men really the reason why women all over the world starve them selves and go on crazy diets? Are men really the reason why we go to the gym for hours each week? NO! They shouldn’t be! Healthy living isn’t a punishment! We should be working out and eating healthy because it makes us feel good, not to attract the most men. If he really loves you, he wont care about those kilos, right?

I’m saying this to myself as well as you guys. I need to remember this too. All our bodies are different – some are born with curves, some with muscle and some might be born “boney”.

For some girls these memes/images might be a confidence boost, but for others they can be very hurtful.




Paleo Bread Recipe

Hey Guys


Seriously, I am in love! This paleo bread! It is so good – I’ve never had anything like it. TRUST ME! You HAVE to try it! Like right now! 😉

–       500g of mixed seeds and nuts (I used 100g sunflower seeds, 100g pumpkin seeds, 100g linseed, 100g sesame seeds, 50g almonds and 50g hassle nuts)
–       5 eggs (size M)
–       100g of olive oil.
–       2 tsp. Salt

Mix everything gently together in a bowl.
Fill the mixture into a baking form (about length 25 cm).
Bake the bread for 60 minutes (160 degrees Celsius).
This bread is a bit high in calories, but it is also filled with LOTS of healthy fats.
