Low Carb Pizza

Just thought I would pop in to share a little (and easy) recipe. I find that this can be eaten for lunch, dinner or even breakfast. I mean, who doesn’t love pizza right?

Today has been an easy day. I woke up at 8am and went out for brunch with some of my favorite girls. I only had one class at school – chemistry, my favorite (actually I’m thinking about becoming a doctor? Just an idea.) Later I’ll go to the gym – it is cardio day, so I’m taking two classes. It’s gonna be horribly hard, but I LOVE cardio classes at the moment – the music is loud and the instructor is amazing!

Anyways.. Back to the recipe:


–       1 egg + 2 egg whites
–       a little oil for the pan
–       2 tbsp. tomato paste
–       5-6 pieces of sliced chicken
–       40 g cheese (I used 10%)

How to:
Beat and mix the eggs gently. Spread the oil on a medium heated pan, and cook the eggs like an omelet. Flip it around and add the fillings. Then leave pan on low heat and cover it with a piece of tin foil. Wait about 10 minutes and viola! The cheese is melted! Now arrange the pizza with lots of fresh veggies and ENJOY!

Flourless cauliflower pizza


Pizza is unhealthy?? Uhhh.. No? I don’t think so?


It is actually a few weeks ago I made this pizza. One of my girls was telling me how “eating healthy” is just sooooo boring and NOT tasteful. So, what do I do? I invite her over for dinner to prove her WRONG! I made her this ymmie flourless pizza and she LOVED it!

–       1 cauliflower
–       ½ zucchini
–       3 egg
–       3 tbsp dried rosemary
–       2 tsp salt
–       100g finely shredded parmesan cheese
–        3 cloves of garlic (pressed)

–       Tomato paste
–       4 tomatoes
–       125g Serrano ham
–       125g fresh mozzarella

How to:
Remove the stick from the cauliflower and cut the rest into smaller pieces. Put the pieces in a blender and mix until it looks like rice. Grate the zucchini finely and mix all the ingredients in a big bowl.
Spread the mixture on a baking pan with a baking sheet. Make sure the mixture fills out the entire pan. Bake in the oven for 40-50 minutes (200 degrees Celsius).
Meanwhile you can prepare your toppings. Basically you can use whatever you want! My favourite is ham, tomatoes and fresh mozzarella (sometimes also pineapple!).
When the pizza base I baked you can add your toppings. Then put the pizza back in the oven for about 20 minutes (depending on the toppings).
Serve with fresh salad and enjoy!
